Whitetail Sausage and Grits Casserole

If you like to take advantage of the full range of hunting and fishing seasons, you might get a little forgetful of the bounty that’s living in your freezer. Remember that deer sausage that you made? Now’s the time to use it for a quick and hearty dinner that everyone will love. If you don’t have any deer sausage handy, any smoked pork or milder game sausage will work.

You’ll need:

  • 1 pound deer or comparable sausage
  • 1/2 cup cooked grits
  • 1 cup sharp cheddar cheese, grated
  • 1/2 cup chopped ham
  • 3 eggs
  • 3/4 cup milk
  • 1/4 stick butter
  • Salt and pepper to taste

Brown and drain deer sausage, then put into an 8-inch casserole pan. Cook grits following package directions, removing a small amount of the liquid called for so they have a thicker consistency; not thin or watery. Add butter, cheese, and ham to grits. Beat eggs, milk, salt, and pepper together and add to grits. Pour over sausage in casserole. Bake at 350 degrees for 40 minutes.
